Long live the Corsican diet and its toothsome sweets! A kind of flan made from brocciu (a soft sheep's cheese) and flavoured with lemon, fiadone occupies a special place in the Corsican repertoire. If you can't find brocciu any sheep's cheese will do.

For 6:
- 250g fresh brocciu
- 80g sugar
- zest 1 lemon
- 2 medium eggs
- 6 silicone muffin moulds
or similar

Preparation time : 10 mins
Cooking time : 20 mins
Cooling time: 60 mins
- Preheat oven to 190°.
- In a large bowl beat the eggs and sugar till pale yellow,
- Add the brocciu, using a fork. Mix well. Add lemon zest and mix again, then pour into the moulds.
- Cook for 20 mins in the centre of the oven.
- Leave to cool completely before turning out,
- Bon appetit
These little flans can be made the day before and stored in the fridge.
