Long live the Corsican diet and its toothsome sweets! A kind of flan made from brocciu (a soft sheep's cheese) and flavoured with lemon, fiadone occupies a special place in the Corsican repertoire. If you can't find brocciu any sheep's cheese will do.

 

For 6:

  • 250g fresh brocciu
  • 80g sugar
  • zest 1 lemon
  • 2 medium eggs
  • 6 silicone muffin moulds
    or similar

Preparation time :    10 mins   
Cooking time :    20 mins
Cooling time:        60 mins

 

 




  1. Preheat oven to 190°.
  2. In a large bowl beat the eggs  and sugar till pale yellow,   
  3. Add the brocciu, using a fork.  Mix well.  Add lemon zest and mix again, then pour into the moulds.  
  4. Cook for 20 mins in the centre of the oven.
  5. Leave to cool completely before turning out,
  6. Bon appetit

These little flans can be made the day before and stored in the fridge.
